We are bringing the same "no-shortcuts" philosophy we use for our 72-hour sourdough to the art of Boba tea. Most boba shops use instant tea powders and store-bought syrups. It works. But it cannot produce the flavour or the clean finish that fresh-brewed tea creates. Here is what happens in our kitchen:

A stale pearl is rubbery; a properly cooked one is silky on the outside and firm on the inside. We cook our pearls in small batches throughout the day to ensure the texture is always fresh.
